Ingredients
  

  • 1 cup fresh cranberries or frozen cranberries
  • 1/4 cup sugar or honey/agave syrup
  • 1/4 cup water filtered preferred
  • 2 tablespoons cranberry syrup prepared from cranberries, sugar, and water
  • 1 bottle champagne or sparkling wine dry Brut or your choice
  • optional orange zest or bitters for garnish

Method
 

  1. Chill your glasses in the fridge for at least 15 minutes to keep the drink cold and bubbly.
  2. Combine fresh cranberries, sugar, and water in a saucepan and bring to a gentle simmer over medium heat.
  3. Let the mixture simmer for about 5 minutes until the cranberries burst and release their juices, filling the air with a tart aroma.
  4. Strain the cranberry mixture through a fine sieve into a bowl, pressing gently to extract all the flavorful syrup.
  5. Pour 2 tablespoons of the homemade cranberry syrup into each chilled glass.
  6. Carefully top each glass with chilled champagne or sparkling wine, pouring slowly to preserve the bubbles and avoid overflow.
  7. Garnish each drink with a few fresh cranberries or a twist of orange peel for a festive touch and aroma.

Notes

Make the cranberry syrup ahead of time and store in the fridge for up to a week. Always chill your ingredients and glasses for the best fizz. Adjust sweetness to taste by adding more or less syrup.
