Ingredients

  • 4 pieces flour tortillas whole wheat or white, depending on preference
  • 1/2 cup refried beans creamy and slightly smoky
  • 1 cup shredded cheese cheddar, Monterey Jack, or a blend
  • 1/4 cup black olives or peppers for spooky eyes and mouths
  • sour cream or guacamole to taste dips for serving

Equipment

  • Skillet or non-stick frying pan
  • Spatula
  • Knife
  • Cutting board
  • Measuring spoons and cups

Method

  1. Lay out the tortillas on a clean surface and spread a thin layer of refried beans over half of each tortilla, then sprinkle with shredded cheese.
  2. Place small slices of black olives or peppers onto the cheese to create spooky eyes and mouths, arranging them as desired for fun faces.
  3. Fold each tortilla in half over the toppings, pressing gently to seal and hold everything inside.
  4. Preheat your skillet over medium heat until it feels warm and you can hear a gentle sizzle when a drop of water is flicked in.
  5. Carefully place a folded quesadilla into the skillet and cook for about 3-4 minutes, until the underside is golden brown and crispy.
  6. Use a spatula to gently flip the quesadilla and cook for another 3-4 minutes until the second side is golden and the cheese is melted inside.
  7. Remove the cooked quesadilla from the skillet and let it rest for a minute to cool slightly and allow the cheese to set.
  8. Using a sharp knife, cut the quesadilla into slices or shapes for serving, revealing the melty cheese and spooky toppings inside.
  9. Serve the spooky quesadilla slices with dollops of sour cream or guacamole for dipping and extra Halloween fun.
